A Colombian Gesha lot from Wilder Lazo, named 'Lady Geisha' after his wife Laidy. The cherries undergo a 60-hour anaerobic fermentation in the skin before pulping, followed by a further 100-hour anaerobic fermentation in sealed tanks before drying on raised beds. Roasted fast and light to preserve its delicate fruit and floral character, this lot is best suited to filter brewing rather than espresso.
