Brewing Methods

Produced by the women-led Vunga Cooperative in Rwanda's Nyabihu District, a small but highly regarded operation that placed 4th in the 2014 Rwanda Cup of Excellence. Red Bourbon cherries are hand-sorted and floated, pulped, fermented in concrete tanks for around 12 hours, washed and graded through a serpentine channel, then sun-dried on raised beds for roughly 30 days.
