Brewing Methods

Grown at 1500-1650m in Dalat's Lang Biang mountains by Slovak farmer Marian Takac (Catimor, Bourbon, Typica and Caturra varieties, cupping 85.5), this lot is black honey processed - cherries are depulped but the sticky mucilage is left fully intact through drying, deepening sweetness. Roasted Medium (City+) for espresso, expect orange, brown sugar and chocolate notes.
