Brewing Methods

The Underdog (lot Waykan) is a washed Guatemalan coffee from Huehuetenango, grown at 1,400-2,200 m a.s.l. from the same farmers, harvest, and bushes as Rebelbean's premium single-origin lots, but scoring 81-84 points rather than 80+ - bought at a fair price to give farmers a better outlet for the rest of their harvest. Sweet with a full body and low acidity, it's built to be an easy, crowd-pleasing everyday cup. On espresso it's maximally sweet with bitter chocolate, caramel, plum, and a long nut-butter finish; on filter it's sweet and nutty with milk chocolate, praline, a light stewed-strawberry acidity, and a hazelnut finish. Roasted omni-style, and works well in automatic machines.
