N39, a Bourbon variation originating near Kilimanjaro in the late 1920s, grown at the Edelweiss estate and processed as a natural. A controlled pre-fermentation under black tarpaulins precedes a slow, thin-layer sun-dry over 25-26 days, giving a cup bursting with vivid fruit character, sweetness and a coating mouthfeel.
