From the Shyira washing station via partner Muraho Trading, processed as a natural anaerobic - cherries are sealed in an airless container to ferment before drying. This gives a full nougat-and-rum body, intense passion fruit sweetness, and a pleasant blackberry acidity. Light roasted, best suited to alternative/filter brewing methods.
