Pitaya is a Pink Bourbon coffee sourced from smallholder producers in the Huila region of Colombia by Minga Coffee, whose team blends Pink Bourbon lots from neighbouring farms into one lot representative of the variety. It's washed using traditional wet-mill methods, reflecting Minga's focus on clean, well-executed washed coffee rather than experimental processing.
