An Ethiopian heirloom variety grown at Finca Las Etiopes in Jaen, Cajamarca, Peru (1,950-2,000 m.a.s.l.) by young farmers Simon Brown and Merlith Cruz, who also run the Chacra importing company. The cherries were rinsed, placed whole into a sealed bioreactor tank, and inoculated with mosto (fermented coffee juice) as a starter culture before a careful multi-week raised-bed drying. The result is a luxurious cup with lush blueberry, jasmine, and cardamom aromatics, slivered almond, and generous sweetness. Sold as whole bean only.
