Montaña ('mountain') is an organic, washed coffee grown by small-scale farmers around San Ignacio in Peru's Cajamarca department, at 1,400-1,700m in the Andes. Made up of Catimor, Pache and Typica varieties, careful fermentation and shaded drying give a full-bodied, sweet cup.
