From Einer Saldivar's remote farm El Cedro in Cajamarca, Peru, this Organic-certified, Washed-processed lot ('Cansaboca') comes from a lower plot of the farm at around 2,000 m.a.s.l. Expect fresh red apple balanced by soft demerara sugar, with satsuma emerging as the cup cools. Roasted medium-dark.
