Description
A benchmark Geisha from Finca Deborah, hand-picked, de-pulped and fermented in air-tight, CO2-flushed steel tanks for roughly 50 hours - Jamison Savage's 'Echo' process, in which a portion of the removed cascara is reintroduced to the tank to add extra layers of flavour. The coffee is then gently rinsed and slowly dried on shaded raised beds to around 11% moisture, aiming for an exceptionally clear, world-class cup.
