Description

Ombligon is a rare lot from Finca El Diviso in Pitalito, Huila, Colombia, grown by brothers Nestor and Adrian Lasso. The variety is believed to be an Ethiopian Heirloom x Pacamara mutation, and the coffee goes through a multi-phase process - flotation, thermal shock, a 48-hour oxidation with mosto, a second thermal shock, and sealed anaerobic fermentation with added brewer's yeast - followed by mechanical and canopy drying. The result is a dense, fruit-forward cup with guava, cane sugar, cranberry and blood orange notes. It's sold as an 'Omni Roast', meaning it's roasted to suit multiple brew methods rather than to a single stated roast intensity, so roast_level is left blank.
