Description
A carbonic maceration and washed lot of the rare Papayo variety from Campo Hermoso farm in Cauca, Colombia, grown at around 1,650 masl. Founded in 2000 by Edwin Noreña, the farm shifted toward specialty production in 2014 and now cultivates innovative varieties alongside Papayo, whose slow-ripening cherries concentrate sugar for a distinctive cup. Expect notes of jasmine, guava, and tutti frutti.
