Organically grown coffee from a community of farmers around Jaltenanga in Chiapas, Mexico, who formed their association in 2011 to survive the financial impact of coffee leaf rust and have since invested together in farm renewal and shared processing know-how. Roasted medium-dark for espresso, it falls on the more bitter side with almond and caramel notes and a low, red-apple-like acidity.
