Brewing Methods

KEVENKA is produced by brothers Kevin and Kenny Soewondo, who moved from running a café in Surabaya into roasting and eventually processing their own coffee near Mt Ijen in East Java, Indonesia, buying cherry mostly from Madurese farmers. The cherry is optically sorted, then undergoes a two-day anaerobic fermentation before drying, hulling, and a further sorting pass.
