A washed lot from Haru, one of the earliest washing stations near Yirgacheffe, Ethiopia, set up in the 1970s. Ripe, hand-sorted cherries are pulped, briefly fermented, washed in clean running water, and dried on raised beds to 11.5% moisture, with regular water-quality checks used to keep fermentation consistent.
