GourmetKáva Specialty's Peruvian Huabal, a washed lot from smallholders in the Jaén province of Cajamarca (1700-1900 m.a.s.l., cupping 85), fermented 36 hours and dried 10-15 days on raised terraces. Notes of cranberry, stone fruit, brown sugar and black tea from a region whose varied microclimates and altitude give complex cup profiles.
