Brewing Methods

Processed at the Gatta washing station, this lot is sourced from smallholder communities across Sidama's Bensa district, grown at 1,920-2,020 metres above sea level. The high altitude and cool temperatures slow cherry maturation, producing small, dense beans with concentrated sweetness. Only fully ripe, floated cherries are selected, then dried on raised African beds for 14-18 days, giving a syrupy, fruit-forward cup with delicate bergamot florals and impressive clarity.
