Description
From Elider Cruz's Finca El Chamanal in the Sallique municipality of Cajamarca, Peru, grown at around 2300 masl. This lot is Pacamara, selectively hand-picked and depulped the same day, then fermented anaerobically in sealed bags for about 48 hours before washing and slow drying in a solar tent to around 11% moisture.
