A rare Laurina (Bourbon Pointu) variety grown by Edinson Argote at Finca Quebraditas in Cauca, Colombia. The coffee goes through a multi-stage process: 24 hours of cherry-oxidation, depulping, an 18-hour dry oxidation, a brief hot wash, 36 hours of temperature-controlled fermentation with a specific yeast culture, a cool wash to seal fermentation, and finally slow mechanical drying. Roasted light and fast for filter brewing, it's noted for low bitterness, high sweetness, and a tropical, delicate acidity.
