Brewing Methods

A washed Castillo/Caturra/Colombia varietal blend grown by multiple smallholders across the La Serrania mountains of Huila, Colombia, at 1,500-1,750 m.a.s.l., then sugarcane-process decaffeinated at the Descafecol plant in Manizales using ethyl acetate derived from sugarcane production. The process preserves most of the original character while enhancing sweetness, giving a balanced, smooth cup of toasted walnuts, dried figs, brown sugar, and a baker's-chocolate finish.
