Los Nogales in Pitalito, Huila was founded some 80 years ago by Ricardo Hernandez and later won Colombia's Cup of Excellence in 2005 under his son Ricaurte and wife Suldery Arango. This lot goes through the farm's own low-caffeine process - hot water and a natural solvent derived from coffee pulp removing around 95% of caffeine - followed by a 96-hour sourdough fermentation and an 8-day controlled dry, giving a sweet, low-bitterness cup with nectarine, caramelised banana and bergamot notes. This is a reduced-caffeine ('low caf') coffee, not a full decaf, so is_decaf is left false.
