The lot undergoes an open fermentation of around 48 hours at roughly 15°C, then is washed and slow-dried under covered dryers for 25 days before a further 12-day stabilisation. The washed process keeps the cup clean and bright, letting Pink Bourbon's natural sweetness and floral notes shine.
