Description
A collaboration between grower Finca Los Nogales and exporter Cata Export, using a technique developed jointly by the two: a 72-hour in-cherry oxidation, pulping with mucilage retained for a 36-hour anaerobic fermentation, then a light wash before drying. The layered process gives a decadent cup with rich, jammy notes.
