This Red Bourbon lot comes from Finca Las Flores in Acevedo, Colombia, grown and processed by Jhoan Manuel Vergara Ayure and his family. The cherries go through an elaborate controlled fermentation - a thermal shock, 60 hours anaerobic, a 12-hour oxidative phase, and a further 24 hours anaerobic - before drying in hermetic chambers and a 10-14 day rest before milling. The result is a vibrant, syrupy cup with banana bread, raspberry marshmallow and white tea notes.
