Cadence comes from Finca El Diviso in Pitalito, Huila, Colombia, farmed by third-generation producer Nestor Lasso. It's a naturally processed lot put through an elaborate fermentation regime - a thermal shock, an initial 60-hour anaerobic fermentation, a 12-hour oxidative rest, and a further 24 hours anaerobic - before drying, giving it the complexity typical of the farm's differentiated processing work.
