A world-exclusive microlot for Assembly, selected from a single-harvest plot (Ribeirão das Pedras) at Fazenda Mió and dried as a natural, a low-water, low-intervention process. Slow drying in a dehumidifier over roughly nine days, followed by a short rest in wooden silos, preserves sweetness while producing a full-bodied cup with rich chocolate flavours and ripe stone fruit.
