From Finca Trapiche in the Samaipata region of Santa Cruz, Bolivia (1,667 m.a.s.l.), owned by the Rodriguez family of Agricafe. This Bourbon lot uses Mosto Washed processing, where a second batch of cherry ferments submerged in the fermentation liquid ('mosto') saved from an earlier Washed batch, developing extra complexity. Expect juicy blackcurrant cordial, brown sugar, and a finish of bourbon biscuit. Roasted medium to medium-dark.
