Bolivia Aljiri comes from the Aljiri cooperative, 19 families founded in 2022 in Collasuyo, La Paz, whose 'Matriarcas' project supports greater involvement of women in farm leadership. The Typica, Red Catuai and Catuai lot is washed - hand-picked, pulped, fermented in open tanks, washed, and dried slowly over two weeks - giving a clean, medium-bodied cup with gentle mandarin-like acidity. On filter it's juicy with dominant apricot, gooseberry, and a touch of elderberry blossom, finishing with cocoa and macadamia; on espresso caramel and molasses sweetness lead, with brighter redcurrant acidity and intense apricot aromatics. Sourced through Cafe Imports, roasted omni-style for both filter and espresso.
