Beansmith's Nicaraguan Los Papales, a natural-processed Yellow Pacamara from the López family's century-old farm in Jinotega's Datanlí mountains (1350-1500 m.a.s.l., cupping 86). Cherries are hand-picked at high ripeness, mechanically sorted and slowly dried on raised beds for around 30 days; the Pacamara variety typically shows chocolate, fruit and herbal complexity, amplified here by the natural process.
