Assembly's house espresso is sourced from smallholders across the Cajamarca region of Peru, from high-altitude farms harvested early in the season and processed on-site. It is an intentional blend of roughly 20% natural-processed and 80% washed coffee from the same region, roasted to be sweet, low in acidity and viscous, working equally well as an espresso or brewed through a French press.
